My Chocolate Rice Cakes Recipe is inspired by my all-time favorite rice cakes, the ones I consumed while serving as a missionary in the Philippines. The rice cakes are simply delicious; when fully baked, they are light and fluffy.
The recipe I shared with you here is similar to what we prepared back home; however, I added a bit of cocoa powder & cayenne pepper to give these chocolate rice cakes that extra sweet punch. Of course, you can always add or skip the cocoa if you prefer.
How To Make Chocolate Rice Cakes Recipe?
Ingredients:
- 3 cups brown rice flour (gluten-free if needed)
- 1/2 cup cocoa powder
- 2 eggs + 1 egg yolk
- 2 T coconut milk
- 1/4 tsp salt
- 1/4 tsp cayenne pepper (optional)
- For the chocolate frosting:
- 1 1/4 cups unsweetened cocoa powder
- 5 T coconut milk (or 3 T if you prefer not to use coconut milk)
- 1 tsp pure vanilla extract (or any other flavoring of your choice) – optional To. To. Finish:
- 1 cup natural macadamia nuts, almonds, or cashews (optional)
Directions:
Step 1.
Preheat oven to 350F and line baking pan with nonstick cooking spray.
Step 2.
Mix all the ingredients except the nuts in a large bowl until a smooth batter is achieved.
Step 3.
Line another baking pan or plate with parchment paper. Using your finger, spread the cake batter into thin cakes approximately 1/4-inch thick (see picture above). Bake for 10-15 minutes (depending on the size of rice cakes) until cooked through and slightly golden brown around the edges.
Note:
The center of the rice cakes may not be completely cooked when you remove them from the oven.
When trying to cool the rice cakes, you’ll see that they will deflate a bit, and their shape will become uneven. That’s okay – they are supposed to be like that. Just continue cooling them on the pan until cool enough to handle, and then move them onto a wire rack to finish baking.
Step 4.
Meanwhile, prepare your frosting by placing all ingredients in a small bowl or food processor. Whisk well until everything is combined.
Step 5.
Once the rice cakes are cooled, remove them from the oven and scatter your frosting over the top. Place in the refrigerator to cool (about 30 minutes). When ready, top with your desired nuts or enjoy plain (they’re great for breakfast, too!).
Notes:
You can bake these little cakes in advance and store them in an airtight container at room temperature for up to 2 days. While you frost the cakes, they might get a little soft. If you are short on time and need to prepare them in advance, bake your cakes, let them cool and store them in the fridge or freezer until ready to frost!
