  • 1/2 cup of water
  • 1/4 cup of milk
  • 3 tablespoons cocoa powder [preferably organic]
  • 1 3-inch piece of cinnamon stick
  • 2 tablespoons chili powder [preferably a spicy chili powder, not too much!]
  • 1 1/4 cups flour [all-purpose flour is OK]
  • 1 1/4 teaspoons baking powder [soda or baking soda is the best]
  • 2 teaspoons salt.  Salt is optional but recommended. 
  • 1/2 teaspoon of the vanilla extract [optional]
  • 1 cup of sugar [white cane sugar is best]
  • 1 1/2 tablespoons oil [vegetable oil is best, but sunflower or canola oil would also work]

Prepare step to step:

Step 1. Preheat oven to 375°F. 

Step 2. Grease a mini cake tin with oil.  

Step 3. Put cocoa powder, cinnamon stick, and chili powder in a small bowl and mix well with a fork until the mixture is well-blended and you cannot see any lumps of dry ingredients left. 

Step 4. Whisk the flour, baking powder, and salt in a small bowl. Set aside.

Step 5. Place sugar, oil, milk, and vanilla extract in a large bowl and mix well with a hand mixer until the sugar has dissolved completely. 

Step 6. Add the dry ingredients (sugar mixture) to the wet mixture and the cocoa powder mixture, stirring quickly to prevent any lumps from forming in the batter. 

Step 7. Pour into prepared tin and level the top with a cake spatula, table knife, or spoon. 

Cutting and serving:

Step 8. Put a cake tin into the oven for 4 minutes at 355°F [190°C] until it becomes lightly browned. 

Step 9. Take it out of the oven and allow it to cool enough to touch without burning your fingers. 

Step 10. When the cake is cool, use a sharp knife to cut it into 6 equal portions, leaving about a 1/2″ sized border around the edge of each cake. 

Step 11. Serve and enjoy.
