Ingredients:

  • 3/4 cup (1 1/2 sticks) unsalted butter,
  • 2 tbsp. vanilla extract
  • 16 ounces of cream cheese
  • 1 tsp. instant coffee granules
  • 1 1/4 cups powdered sugar
  • 1 1/4 cups unsweetened cocoa powder
  • 3/4 cup creamy peanut butter

Directions:

Steps 1:

Blend butter, cream cheese, and vanilla in a large bowl.

Steps 2:

Mix coffee granules into the cooked cream cheese mixture. Mix until thoroughly blended. Set aside.

Add powdered sugar and cocoa powder to the cream cheese mixture, one cup at a time, blending well after each addition.

Add peanut butter and stir until smooth and no lumps are present.

Cover and refrigerate until ready to use.

To cover a cake, add one cup of icing to each corner, starting at the bottom and working your way across the top of the cake. Spread evenly with a small offset spatula or butter knife. Smooth any areas using an offset spatula to spread each area equally. Top with remaining icing as desired.
