- 1 1/3 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 1/2 cups granulated sugar
- One large egg plus two egg yolks
- 3 tbsp water, coffee, or milk
- 1 tsp vanilla extract
- 12 oz cream cheese, softened to room temperature
- 5 1/2 tbsp. unsalted butter softened to room temperature
- 1/3 cup powdered sugar
- 2 tbsp. corn syrup
Preheat oven to 350 °F (175 °C). Grease an 8-inch square pan or a 7-inch round pan.
Mix flour, cocoa powder, baking powder, and soda in a medium bowl. Set the dry ingredients aside.
In a large bowl, beat the egg, egg yolks, water, vanilla, and cream cheese. Set the bowl aside.
Add butter in the same medium bowl with an electric mixer fitted with a paddle attachment and beat on medium speed until smooth, about 2 minutes.
Reduce speed to low; add sugar and beat for at least 1 minute until well combined. This is your buttermilk mixture.
Add in flour mixture and continue beating on medium speed until just incorporated.
Add in the buttermilk mixture and beat for a few seconds on low speed until just combined.
