How to make Hot Chocolate Cake Recipe?

Ingredients  (makes one sizeable 9-inch cake)

  • 2/3 cup shortening or butter (I use coconut oil)
  • 3 cups sugar
  • 2 teaspoons vanilla extract
  • 5 eggs, beaten
  • 1 (12 oz. can) Hot Cocoa Mix (I use Hershey’s chocolate hot cocoa mix)
  • 2 cups sifted cake flour
  • 2 teaspoons baking powder (I used baking soda and baking powder)
  • 1 teaspoon salt

Cream Together:

Shortening, sugar, and eggs. Stir in: flour, cocoa mix, baking soda, and salt. Fill greased 9-inch round cake pan. Bake 350 degrees for about 35-40 minutes in an oven preheated to 350 degrees. Cool in pan to room temperature and then in the refrigerator. Remove from pan and cool completely.

 Cream frosting:

  • 3/4 cup shortening (I use coconut oil)
  • 2 cups powdered sugar (I use organic powdered  sugar)
  • 1/2 cup hot chocolate mix (I used Hershey’s chocolate hot cocoa mix)
  • 1 teaspoon vanilla extract
  • Add all ingredients to a mixing bowl and beat until smooth and creamy.

Thin Chocolate Shavings:

About 2 pounds of dark chocolate or other chocolate of your choice (I use Valrhona 88% dark chocolate)

In a double boiler, take slowly melted chocolate and stir in 3 Tbsp. Corn syrup. Heat until it just begins to boil. Remove from heat, wait 5 minutes, then stir in 1/2 cup of butter or glycerin (optional).

Preparation of Chocolate Shavings

Step 1. Melt chocolate in a double boiler or microwave, and melt until thin and smooth. Suppose using a microwave, stirring every 30 seconds for about 1 minute until melted.

Step 2. Pour melted chocolate onto a baking sheet lined with wax paper or baking paper (just in case it falls from the wax paper), spread it thin, and set aside to cool completely. The thinner you spread it out, the easier to shave.

Step 3. Use a sharp knife to slice the chocolate into thin shavings. Set aside for later use.

Note: Chocolate can be stored in a closed container in the refrigerator or freezer, but beware that it will become solid at room temperature, so keep that in mind while working with it!

Assembly: Spread frosting over the cake, then sprinkle evenly with chocolate shavings. Chill before serving. Enjoy!
