Equipment:

  • 9 x 2-inch metal baking pans
  • Ten large ice cube trays
  • Parchment paper or plastic wrap (optional but recommended)

Directions:

Step 1. In a bowl, combine the skim milk and cocoa powder. Stir together until smooth with the vanilla and salt. Set aside.

Step 2. Melt the chocolate chips in a microwave or a pot of hot water on the stove for about 30 seconds until melted.

Step 3. Stir the melted chocolate again, and add the butter. Set aside.

Step 4. In a large bowl, stir the milk and cocoa powder mixture until smooth. Be careful not to over-mix the mix. Taste it; you should taste none of the cocoa powder, but if you do, just keep mixing until it is all blended in.

Step 5. Pour the mixture into your ice cube trays or baking pans about 2 inches apart. If you’re using ice cube trays, place a small piece of parchment paper or plastic wrap on top. If you don’t, the sticks will stick to the trays.

Step 6. Freeze for 4 hours or until frozen solid.

Step 7. Remove from the freezer and invert onto a cutting board with a thin layer of water sprayed on it to prevent sticking. Cut into 10 sticks with a clean knife, or cut into bars ahead of time and store in an airtight container in the freezer until ready to use.

Step 8. To make hot chocolate, place the sticks in a coffee mug and pour hot milk over it until covered. Stir with a clean spoon or whisk, and enjoy!

Notes:

  • For larger batches, double the recipes and pour into a 13 x 9-inch pan.
    • Depending on how much chocolate is desired, the number of chocolate chips can be increased or decreased.
    • No refined sugar is needed because the sugar already comes from skim milk. You will have low-fat hot chocolate.
    • If you want to make melted chocolate for dipping the sticks, use 1/4 cup of semi-sweet chocolate chips and three tablespoons of butter (cut into small pieces).
    • You can double the recipe, but be careful when handling the mixture. It’s boiling! And if using ice cube trays and parchment paper, I recommend doubling them up to be extra safe.
