Prepare a double boiler. Place a medium bowl over a saucepan containing 3 inches of simmering water with a candy thermometer.
Pour milk into the milk, stir and heat until it reaches 80 – 85°C (this happens fast). You can test your milk temperature by dropping in a small amount of milk into boiling water. If it immediately curdles and floats, you will have the correct temperature. This process is referred to as scalding milk.
Remove the milk from heat and whisk in the yogurt, dextrose, glucose, and stabilizer. Let it cool until it reaches 20 – 25°C (68 – 77°F).
Melt the chocolate with a microwave or on a bain-marie. Mix in the raspberry purée and stir well until smooth.
Mix one-third of the melted chocolate mixture into the cooled milk cream mix. Keep adding in the chocolate mixture until the consistency is right.
Pour into your ice cream machine and follow the instructions.
