  • 1½ cups flour
  • 6 eggs
  • 1 cup brown sugar (for the cake batter)
  • ¾ cups castor sugar (for the cake batter)
  • 300 gm butter
  • 100 ml condensed milk
  • 2 tablespoons cocoa powder (unsweetened)

For The Icing:

  • 2 tablespoons cocoa powder (unsweetened)
  • 4 cups icing sugar
  • ¼ cup softened butter
  • 4 tablespoons of hot water

Directions To Make A Sri Lankan Chocolate Cake Recipe:

Step 1:

Preheat the oven.

Step 2:

Line a 10-inch round cake pan with baking paper. Grease the sides. Set aside.

Step 3:

Beat the egg whites and castor sugar until stiff peaks are formed. This can take anything from 5 to 15 minutes, depending on your egg beaters (beater or whisk). Set aside in a bowl for later use.

Step 4:

Beat the butter for a few minutes until it is light and fluffy.  Add the condensed milk and mix well. Add the brown sugar and cocoa powder and mix well.

Now comes the fun part! Measure out your batter, as you are not adding all these ingredients to one bowl. Add each ingredient 1 tablespoon amount at a time while mixing well until all of them are incorporated into a smooth batter.

Add half of the batter to the greased cake tin pan. Then top with 1½ cups of the egg whites and spread evenly over the batter.

Step 7:  

Top with the rest of the batter and spread it evenly.

Step 8:  

Place the cake in your oven and bake at 160C/320F for 35-40 minutes until a skewer is inserted into the center and it comes clean.

Step 9:

Now comes the hard part. You have to wait for it to cool down before turning it out of the pan. Once at room temperature, turn the cake from the pan onto a plate and let it cool completely.

Step 10:  

To make your chocolate glaze, mix all the ingredients for the icing in a bowl until thoroughly combined and smooth. Smooth over the top of your cake, covering all sides.
