Ingredient:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 4 egg yolks
  • 1 teaspoon vanilla extract

Directions:

Step 1:

In a saucepan on medium heat, add the milk and bring it to a boil. Once it begins to boil, slowly put in the Sugar and frequently stir (usually once every minute or two) until the Sugar dissolves.

When the mixture is boiling, reduce the heat to low and let it simmer for about 10 minutes. Stir occasionally. Take the mixture off the heat and whisk in the vanilla extract.

Step 2:

In a bowl, add the egg yolks. Then slowly pour 1/4 cup of sugar mixture into the eggs and whisk it until well incorporated and you can no longer see any sugar grains in the eggs. Set them aside.

Step 3:

In another bowl, add the heavy cream. Please bring it to a boil, then pour it into the egg yolk mixture, whisking constantly. Continue whisking until smooth, and you can see no white spots from where the sugar syrup was added to the eggs (usually once every minute or two).

Step 4:

Pour this mixture back into the saucepan on low heat and occasionally stir until it reaches around 120-130°F degrees. It should take about 7-8 minutes for that temperature.

Step 5:

Remove the pot from the heat and pour the mixture into it. Let cool to room temperature. Then put it in the refrigerator for about 2 hours, then remove and stir it for two more minutes.

Put the ice cream in an airtight container in your freezer for about 6-8 hours or until it is fully frozen. Enjoy eating!
