  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup white chocolate chips
  • 1/2 cup heavy cream

Directions:

  1. Preheat the oven to 350°F (180°C). Line a 12-cup muffin pan with paper liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs, one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients.
  6. Fold in the white chocolate chips.
  7. Divide the batter evenly among the prepared muffin cups.
  8. Bake for 20-25 minutes or until a toothpick inserted in the centre of a cupcake comes out clean.
  9. Let the cupcakes cool completely in the pan.
  10. Heat the heavy cream over low heat in a small saucepan until it begins to simmer.
  11. Remove the pan from heat and add the white chocolate chips, stirring until the chocolate has melted and the mixture is smooth.
  12. Dip the tops of the cupcakes in the white chocolate ganache, allowing any excess to drip off.
  13. Allow the ganache to set before serving.
